I remember when the Queen paid a visit to Australia and New Zealand in 1991 on the Royal Yacht Britannia we wanted to serve Her Majesty authentic ‘Anzac biscuits’ ( a sweet biscuit popular in Australia and New Zealand, made using rolled oats, flour, coconut, sugar, butter, golden syrup, baking soda and boiling water) So one of the pastry chefs aboard our Australian escort ship came aboard and taught me the authentic recipe and The Queen was thrilled to have them served for afternoon tea.
