Healthy Turkey Meatloaf

Wondering what to cook for family dinner tonight ? This healthy twist on American comfort food takes literally 10 minutes to prepare and then just 45 minutes in the oven. By the time you have kicked your shoes off and caught up on Facebook dinner will be ready… And healthy too !  Any leftovers are delicious warmed up the next day.

Healthy Turkey Meatloaf

Makes 6 portions

For the meatloaf;

2 lb ground turkey

2 ½  tsp kosher salt

½ tsp black pepper

4 cloves garlic, crushed

2 tsp oregano

1 cup onion, finely chopped

1 cup bell pepper, finely chopped

2 eggs

1 (14oz) can diced tomatoes, including the juice

1 cup old fashioned oats

For the topping;

1 cup tomato ketchup

2 Tbs yellow mustard

¼ cup brown sugar

preheat the oven to 350 degrees f

Throw all of the meatloaf ingredients into a large bowl and mix well. Grease a baking sheet and form the mix into one large loaf on the baking sheet.

Whisk together the topping ingredients and spoon over the top of the meatloaf.

Bake in the center of the oven for about 45 minutes. Cool before slicing.
